Cardamom & Lemon Rice Pudding- seriously this is the best dessert I’ve made in a long time

You need a crock pot for this one–
3 cups milk- calls for whole but I used 2% you could probably use soy and it would be just as good
1 cup heavy cream

4 large eggs beaten

1/2 cup sugar- white, raw whichever you prefer

1/2 cup packed light brown sugar

1 teaspoon vanilla extract

the zest from one good sized lemon

5 whole green cardamom pods

1/4 teaspoon grated nutmeg

3 cups cooked med-grain white rice

1 cup golden raisins

In crock pot, whick together milk, cream, eggs, granulated & brown sugar, vanilla, zest cardamom pods and nutmeg. Stir in rice, cover and cook on high 1 hour stirring occasionally. Reduce heat to low, pull out cardamom pods and add raisins. (I left them in and it wasn’t such a pleasant surprise biting down on these, if you leave them in keep an eye out for them when serving the pudding and remove the pods) Cook for 1 hour on low. Serve warm, or refrigerate and serve chilled. It’s good both ways.
